Lemon & Poppy Seed Muffins

When life throws you lemons, grab ‘em and run, because lemons are bloody expensive and you need to try these Lemon and Poppy seed muffins!

 

MAKES: 10

PREP TIME: 20 MINS

COOKING TIME: 20 MINS


INGREDIENTS:


DRY

· 1 1/2 cups almond meal

· 1/4 cup coconut flour

· 1 tsp. baking powder

· 1/2 tsp. salt


WET
· 3 eggs

· 1/2 cup milk of your choice (dairy, coconut, almond etc. I used almond milk)

· 1/3 cup honey, maple syrup or rice malt syrup

· 1/4 cup coconut oil, melted

· 2 large lemons or 3 small lemons (rind and juice)

· 1 1/2 Tbsp. poppy seeds


SYRUP (OPTIONAL)
· 2 Tbsp. honey, maple syrup or rice malt syrup

· 2 Tbsp. lemon juice

DIRECTIONS:

  1. Preheat oven to 160C and grease 10 cups of a muffin tray (I used coconut oil).

  2. In a large bowl mix together all dry ingredients. Add wet ingredients and mix until combined.

  3. Spoon evenly amongst muffin tray and bake in oven for 15-20min or until golden and firm to touch.

     

  4. Place on wire rack to cool. If making syrup, whisk together honey and juice and pour on top before eating!
