Ginger Anzac Biscuits

You gotta whisk it for the biscuit, right? Adding ginger might have been a risk, but the outcome was definitely positive. These are great, grandparents, those over the age of 70 and me seem to love them!

PREP TIME: 15 MINS

COOK TIME: 10-15 MINS


INGREDIENTS:

· 1 cup rolled oats

· 3/4 cup flour (I used spelt)

· 1/2 tsp. ground ginger

· 1/4 cup crystallised ginger, chopped into small pieces

· 1/2 cup desiccated coconut

· 3 Tbsp. maple syrup

· 1/4 cup coconut sugar

· 4 Tbsp. coconut oil

· 1/2 tsp. bi-carb soda

· 2 Tbsp. boiling water

 

DIRECTIONS:

  1. Preheat oven to 180C degrees and line a biscuit tray.

  2. Combine oats, flour, ground ginger, diced ginger and desiccated coconut in a large bowl.

  3. In a small saucepan heat maple syrup, coconut oil and coconut sugar over medium heat, until sugar is dissolved. Next, remove saucepan from heat, and stir in the bi-carb soda and water.

  4. Add wet ingredients to the the bowl of dry ingredients, mix well.

  5. Roll tablespoon of the mixture into balls and place on baking tray, press down with a fork and bake for 10-15 minutes or until golden.
