Honey Loaf
There is a real ‘Buzz’ about this sweet loaf. It is sure to ‘bee’ a winner with family and friends!
INGREDIENTS:
1 egg
1 1/2 cups applesauce (unsweetened)
1/4 cup honey
1 1/2 cups wholemeal spelt flour
1 1/2 tsp. baking soda
1 tsp. cinnamon
1/2 cup coconut sugar
1/4 cup coconut oil
DIRECTIONS:
Preheat oven to 180C. Lightly grease a loaf tin, I used coconut oil.
Whisk together flour, baking soda and cinnamon in a large mixing bowl.
In another mixing bowl, use an electric mixer, cream together coconut oil, coconut sugar and honey. Add egg and beat until combined.
Pour into pan and bake in oven for 35-45 minutes, or until cake tester comes out clean.
Cool for 10 minutes in pan and then transfer to a cooling rack.
