Quinoa Slice

‘Quinoa’ get a what what?? I am not ‘quazy’ about quinoa, but these are delicious and a great gluten free snack and lunchbox treat.

 

SERVES: 12

PREP TIME: 15MIN

COOKING TIME: 30MIN


INGREDIENTS:

  • 1 cup water

  • 1/2 cup quinoa

  • 1 cup desiccated coconut

  • 1 cup almond meal

  • 1/2 cup dried cranberries

  • 1/2 cup dried apricots (roughly chopped)

  • 100g roughly chopped dark chocolate

  • 1/2 cup rice malt syrup or honey 2 small or 1 large ripe bananas (mashed)

  • 1/2 cup peanut butter

  • 1 tsp. vanilla essence

  • Pinch of sea salt

 

DIRECTION:

  1. Preheat oven to 175C. Line a slice pan with baking paper.

  2. Next, cook quinoa. Place water and quinoa in saucepan and bring to the boil, cover and reduce heat to medium-low. Cook at a simmer until water is absorbed (15-20 minutes).

  3. In a large bowl mix all dry ingredients. In a medium mixing bowl combine wet ingredients, then add to dry ingredients and mix well. Place mixture into prepared pan and use a spatula to spread and smooth the mixture.

  4. Bake in oven for 30 minutes or until brown. Allow to cool on a cooling rack before slicing into pieces.

TIPS & VARIATIONS:

  • Any nut or seed butter can be used instead of peanut butter and the almond meal can be substituted for any type of meal.

  • You can mix up the dried fruit that you use. Other combinations I like include; apple and sultana or date and peach.

  • These are a great snack, handy for the school/work lunchbox, breakfast on the run or served with a cup of tea!
