Quinoa Slice
‘Quinoa’ get a what what?? I am not ‘quazy’ about quinoa, but these are delicious and a great gluten free snack and lunchbox treat.

COOKING TIME: 30MIN
INGREDIENTS:
1 cup water
1/2 cup quinoa
1 cup desiccated coconut
1 cup almond meal
1/2 cup dried cranberries
1/2 cup dried apricots (roughly chopped)
100g roughly chopped dark chocolate
1/2 cup rice malt syrup or honey 2 small or 1 large ripe bananas (mashed)
1/2 cup peanut butter
1 tsp. vanilla essence
Pinch of sea salt
DIRECTION:
Preheat oven to 175C. Line a slice pan with baking paper.
Next, cook quinoa. Place water and quinoa in saucepan and bring to the boil, cover and reduce heat to medium-low. Cook at a simmer until water is absorbed (15-20 minutes).
In a large bowl mix all dry ingredients. In a medium mixing bowl combine wet ingredients, then add to dry ingredients and mix well. Place mixture into prepared pan and use a spatula to spread and smooth the mixture.
Bake in oven for 30 minutes or until brown. Allow to cool on a cooling rack before slicing into pieces.
TIPS & VARIATIONS:
Any nut or seed butter can be used instead of peanut butter and the almond meal can be substituted for any type of meal.
You can mix up the dried fruit that you use. Other combinations I like include; apple and sultana or date and peach.
These are a great snack, handy for the school/work lunchbox, breakfast on the run or served with a cup of tea!
