Apple Comfort Crumble
If you are looking for a healthy take on this comfort food classic, why not ‘d-apple’ in this delicious crumble?

COOK TIME: 20 MINS
INGREDIENTS:
6-8 apples of your choice (I used golden delicious)
2 tsp. vanilla extract
1 tsp. ground cinnamon
3 Tbsp. maple syrup
1/4 water
2 Tbsp. chia seeds
100g hazelnut or almond meal
1/2 cup rolled oats
100g butter, room temperature
3 Tbsp. of coconut sugar
DIRECTIONS:
Preheat oven to 160C, fan forced.
Core and cut the apples into 8 pieces and place into a large pot.
Add the water, vanilla and cinnamon. Cover and cook apples over medium heat for 15 minutes until soft, gently stirring occasionally.
Remove from heat and gently stir in maple syrup and chia seeds. Allow to sit for at least 10 minutes so the liquid is absorbed by the chia seeds and thickens.
In a bowl rub together crumble ingredients. Place apple mixture into a baking dish and sprinkle with crumble.
Bake for 20minutes until golden brown.
VARIATIONS & TIPS:
Delicious served with some custard, coconut yoghurt or Greek yoghurt.
When in season stone fruit are a great substitute for apples, just remove the cinnamon.
If you don’t like the apple skins they can be peeled. However, remember a lot of fibre and nutrients are found in the skin!
