White Christmas
This recipe goes out to all of you that have missed out on festive treats over the years due to food allergies or sensitivities. This version of the classic White Christmas slice, is delicious but also dairy-free, gluten-free, wheat-free, and vegan friendly.
It is extremely simple to make, and a great one to get the kids involved. Try adding different dried fruits or nuts, use some Christmas spice mix or even drizzle with a little melted chocolate of your choice.
This slice will be a sure winner this festive season. The perfect item to bring to a friend's BBQ when they say, “just bring yourself.” Great for picnics, morning teas and other gatherings, not to mention the perfect stocking filler when popped into a cute jar as a gift.

INGREDIENTS LIST:
3 ½ cups rice puffs
1 cup OWN desiccated coconut
½ cup OWN cranberries or dried cherries
½ cup OWN flaked almonds
1 cup Absolute Organic rice malt syrup
½ cup Noya cashew butter
300g Chef’s Choice coconut butter
2 tsp. Very Vanilla vanilla essence

DIRECTIONS:
In a bowl mix puffed rice, coconut, cranberries, cherries and almonds together.
In a saucepan gently melt coconut butter, cashew spread and rice malt syrup, continually stir until combined. Allow to cool slightly.
Then, stir in wet ingredients. Set aside for 5-10 minutes to cool, stirring every minute.
Pour mixture in a lined slice tine and press firmly until tightly packed and smooth on top. Place in fridge until hard, overnight is best. Then, slice into desired size.
