Sunday Brunch Bruschetta

Fresh market produce, mixed with some handy Gourmet Garden herbs from my fridge is all I need to make this delicious, yet simple, Sunday Brunch Bruschetta. You will be thanking Shez’s Kitchen a ‘brunch’ for this weekend’s meal inspiration.

COOK TIME: 5 MINS 


INGREDIENTS LIST:

  • 4 thick slices fresh sourdough bread (I used spelt multigrain) 

  • 2 tsp. Gourmet Garden garlic paste 

  • 6 Tbsp. olive oil 

  • ¼ cup parmesan cheese, shaved 

  • 1 cup diced gourmet tomatoes 

  • 1 avocado, cubed 

  • 2 Tbsp. Gourmet Garden lightly dried parsley 

  • salt and pepper to taste

GOURMET GARDEN PRODUCTS USED: 

  • Garlic (paste) 

  • Parsley (lightly dried) 


DIRECTIONS:

  1. Preheat grill and line a baking tray with baking paper. 

  2. In a small bowl combine garlic and 4 tablespoons olive oil. Place bread slices on tray and spread garlic mixture onto bread. Evenly distribute parmesan cheese onto bread and place under grill for 3-5 minute or until cheese is melted and bread is lightly toasted.  

  3. Meanwhile, combine tomatoes, avocado, lightly dried parsley, salt, pepper and 2 tablespoons of olive oil in a small bowl. Top toasted bread with mixture and serve.
