Spinach & Cheese Triangles
These Spinach and Cheese Triangles are one of my family favourites and ‘acute’ snack everyone can enjoy! I have been making these for years and I am not sure where the recipe or idea came from. I remember in the later years of high school making these regularly in hospitality class with Mrs Kingsley. They were a class favourite and we could whip them up in no time and be eating them before the class ended.
These are great to whip up for a family or house mate games night or an easy lunch or dinner option. My partner, Josh and I love these for a movie night at home on the couch. Beware of the mess though, the Dyson always gets a workout after these!
Nutritionally, these are pretty good for a vegetarian savoury snack. Plenty of protein in the ricotta cheese, heaps of nutrient dense spinach and filo pastry is a healthier choice than puff pastry. They also freeze exceptional well and are easy just to lift out and pop into the oven as needed. A golden flaky pastry, tasty cheese filling, and partnered with a dipping sauce of your choice is sure to satisfy any savoury snack craving.
Remember not all triangles are equilateral so don’t stress about folding the filo pastry perfect, they taste better with a bit of character and it just shows they are made with some love!

INGREDIENTS LIST:
1 packet of filo pastry
1 bunch of English spinach leaves
300g ricotta cheese
100g feta, crumbled
½ cup pine nuts, toasted
1 egg, lightly beaten
1 Tbs. lemon rind, finely grated
2 spring onions, finely chopped
¼ cup sesame seeds
olive oil or melted butter
DIRECTIONS:
Preheat oven to 180C. Line two baking trays with baking paper.
Wash and chop spinach leaves, then cook in a small pan of boiling water for 30 seconds or until wilted. Drain and run under cold water, then drain again and squeeze out moisture.
Place into a mixing bowl spinach, ricotta, feta, pine nuts, egg, lemon rind and spring onions. Season with pepper. Mix until just combined.
Ensure you have a clean work bench. Place 1 sheet of filo pastry onto surface. Keep remaining filo covered with a damp tea towel or paper towel to stop it from drying out.
Brush lightly with melted butter or olive oil. Fold filo into thirds long ways. Place a tablespoon of mixture in corner. Fold diagonally to make a triangle shape and continue folding. Brush pastry with olive oil or butter and place on baking tray. Continue this process with rest of the filling.
Sprinkle triangles with sesame seeds and bake for 20-25 minutes until golden brown. Serve with a dipping sauce of your choice.
