Chilli & Lemongrass Chicken Wings
The smell of these wings cooking is sure to get your family and friends excited for dinner. They are super easy, great if you are on a budget and heaps of fun to eat!
Let’s talk about the marinade, it is a little sweet, a bit sour, a wee spicy and packed with a whole lot of flavour. The star of this marinade is definitely the Maleny Cuisine chilli jam! It gives this marinade its stickiness and a punch of flavour. And, bonus, it is made from fresh ingredients and no nasties like many store bought marinades.
Team these delicious wings with some veggies or salad for dinner or serve as a finger food. But if chicken is not your thing, this marinade is great on tofu or tempeh!

PREP: 15 MINUTES + AT LEAST 1HR OR OVERNIGHT IN FRIDGE

INGREDIENTS LIST:
MARINADE
¼ cup Maleny Cuisine chilli jam
2 stalks organic lemongrass (white part only)
2cm nob organic ginger, peeled and grated
rind of 1 organic lemon, finely grated
2 eschalots, peeled and chopped
2 organic garlic cloves, roughly chopped
2 Tbsp. Three Olives olive oil
2 Tbsp. MegaChef fish sauce
2 Tbsp. OWN rapadura sugar
10-12 Eumundi Meats chicken wings

DIRECTIONS:
In a small food processor or blender combine all marinade ingredients until finely chopped. Transfer to a bowl.
Place chicken wings in marinade and toss chicken wings until they are well covered, using your hands is the best way to do this. Refrigerate for at least 1 hour but overnight is best.
Preheat oven to 180C fan forced. Lightly grease or line two shallow roasting pans with baking paper. Arrange chicken wings in a single layer. Roast for 30-35 minutes or until golden and cooked through, they should be sticky too!
