Baked Plums on Toast with Maple Ricotta
Brunch. Not a word I like to use. I know it is deemed as a trendy thing to do on a weekend. However, to me, all I think about is missing out on a meal! However, after careful consideration, I decided to share this recipe as a brunch option for all of you “trendy people” out there! Thoughtful of me, right?
Whether this recipe is for brunch, lunch or a snack, it is scrumptious! So simple to make but will have a big impact on your friends and family. Not only will this recipe please vegetarians, but also provides ‘brunch goers’ with an egg-free option that isn’t just smashed avo on toast. The delicious ricotta adds some serious protein and plums are rich in vitamins, minerals and have plenty of fibre. A sweet option that is full of nutritious goodness which is a rare find indeed.
With the end of plum season insight, we must make the most of them. There are so many varieties available, so visit your local market this weekend and check them out! Whilst you’re there grab some fresh sourdough because quality bread makes a big difference.
Crispy sourdough bread, with a generous spread of the maple ricotta, topped with sweet buttery baked plums. It really doesn’t get much better than that. Some would say this recipe is ‘plum-believable’!

INGREDIENTS LIST:
8-12 assorted plums, halved and stone removed
100-120g butter
¼ cup honey
4 thick slices of fresh sourdough bread
100g cream cheese
100g ricotta
1 ½ Tbsp. maple syrup
½ tsp vanilla paste or vanilla essence
DIRECTIONS:
Preheat oven grill to highest heat.
Line an oven tray with baking paper and place plums cuts side up. In the seed cavity of each plum place a pea size amount of butter and top with a trickle of honey. Place in oven and grill until fruit is slightly tinged with colour but still firm. Cooking time will vary greatly depending on the size and ripeness of the fruit.
Next, prepare the whipped ricotta. Beat the cream cheese until light and smooth. Add the ricotta, maple syrup and vanilla, beat until light and fluffy.
Toast the bread to your liking and spread with a generous amount of whipped ricotta. Arrange plum halves on top. Add extra honey if desired.
