Maple Sticky Date Cakes
These cakes are so scrumptious and versatile. They can be used as a lunchbox treat, snack or made into a great dessert that is sure to impress.

COOKING TIME: 15-20 MINS
INGREDIENTS:
300g pitted dates
2 tsp. bi-carb soda
2 cups of boiling water
1/2 cup coconut oil, melted
2 eggs (room temp)
1 2/3 cups flour (I used spelt)
2 tsp. baking powder
1 green apple, grated
1/2 cup walnuts, chopped
250g cream cheese, softened
1/2 cup maple syrup
1 tsp. vanilla essence
DIRECTIONS:
Preheat oven to 180C and line 1 1/2 muffin trays with paper cases (18 muffins total).
Place dates, bi-carb soda and boiling water in a bowl and allow to soak for 10min.
Transfer date mixture to food processor and whiz until smooth paste is formed.
In a bowl place coconut oil and use an electric mixer to beat in 1 egg at a time. Stir in date mixture. Next, sift in flour and baking powder, then fold to combine. Stir in walnuts and apple.
Divide mixture evenly amongst paper case and bake in oven for 15-20 minutes or until tops spring back when gently pressed.
Use an electric mixer to beat cream cheese, maple syrup and vanilla essence until light and fluffy. Once cakes are completely cooled use a spatula to spread icing on cupcakes.
VARIATIONS & TIPS:
To be honest, I would not change a thing, these cakes are so so tasty. However, if you want to make these for lunches or to freeze, don’t ice them. They are also delicious without it.
Try cakes without icing and serve with custard or even ice cream if you are feeling like a treat or using cakes as a dessert.
