Sweet Potato & Salmon Patties
This recipe is an oldie but a goodie. We have given it a little make over and a nutritional update. Serve these up for something different!

COOKING TIME: 10 MINS
INGREDIENTS:
1 large sweet potato, peeled and cubed
1 large can tinned red or pink salmon
1/2 red capsicum, finely diced
1/2 green capsicum, finely diced
1/2 bunch of coriander chopped finely plus keep some leaves for garnish
1/2 mild chilli (or more depending on how hot you want it)
2cm nob of ginger finely grated
1/2 teaspoon of white pepper
Salt to taste
1/2 cup sesame seeds
1/2 cup sweet chilli sauce
1 Tbsp. of oil
DIRECTIONS:
Boil sweet potato until soft, drain and mash well.
Add salmon (drained), capsicum, chopped coriander, chilli, ginger, white pepper and salt. Mix well.
Shape into patties, then coat in sesame seeds.
In a medium pan heat oil, cook patties on both sides evenly until sesame seeds look slightly toasted and patties are hot in the middle. Approximately 3minutes each side.
Drizzle with sweet chilli sauce and serve with a wholesome green salad.
VARIATIONS AND TIPS:
Do not remove bones from salmon, they are a great source of calcium.
If you don’t like coriander, don’t put it in! flat leaf parsley or some Thai basil can be added instead.
If patties aren’t holding their shape, add a little flour of your choice until the right consistency is achieved.
