Lamington Balls With Chia Jam
To be honest, nothing beats a spongy lamington with Jam. However, these really are a nutritious and delicious alternative.

INGREDIENTS:
RASPBERRY CHIA JAM:
1 cup frozen raspberries
1 tsp. maple syrup
2 Tbsp. chia seeds
1/3 cup water
LAMINGTON:
1 cup raw cashew nuts
1 1/4 cups desiccated coconut
1/4 cup coconut oil
1 tsp of vanilla essence
1 tsp pink himalayan salt
3 Tbsp. maple syrup
2 Tbsp. coconut oil
125g dark chocolate (good quality)
extra desiccated coconut for rolling
DIRECTION:
Make chia Jam. Combine frozen raspberries, 1 teaspoon of maple syrup and water in a saucepan. Bring to simmer, stirring regularly for about 10 minutes, until liquid has reduced by half. Remove from heat and stir in chia seeds. Place in a glass container and put in fridge for approximately 1 hour.
Make Lamingtons. Place cashews and desiccated coconut in a food processor, blitz until fine crumbs are formed.
Add vanilla, maple syrup and coconut oil. Process until all mixture comes together.
Roll into balls with a tsp of chia jam in the middle, then place in freezer to harden.
Place chocolate and 2 tablespoons of coconut oil in a glass bowl and stir over a saucepan of simmering water, until melted.
Dip balls in chocolate and then roll in coconut, place in fridge to harden for at least 1 hour before eating.
