Banana Pancakes

Stack’d with goodness, these banana pancakes are a delicious weekend breakfast.

PREP TIME: 10 MINS

COOKING TIME: 20 MINS


INGREDIENTS:

  • 1 banana, mashed

  • 1 cup wholemeal self raising flour (I like to use spelt)

  • 1/2 tsp. baking powder

  • 1 tsp. cinnamon

  • 1 egg, lightly beaten

  • 3/4 cup milk

  • 1/2 cup coconut sugar

  • 1 tsp. vanilla extract

  • pinch of salt

 

DIRECTIONS:

  1. In a bowl whisk together flour, baking powder, coconut sugar, cinnamon and salt.

  2. In another bowl whisk together banana, egg, milk and vanilla.

  3. Add wet ingredients to dry ingredients and whisk again until mixed.

  4. Melt a little butter over medium heat in a fry pan. Use two tablespoons of mixture for each pancake and drop into the pan, spread out with a spoon if needed.

  5. Bubbles should start to appear after a minute or so, flip the pancakes and cook the other side until both sides are golden and pancakes are cooked through.
